Light Potato Cakes

I had a craving for potatoes and ended up modifying a recipe for potato cakes to be a tad more Joan friendly. I boiled some red skinned potatoes in water with some garlic cloves and mashed them all. Then, I added parsley, Parmesan cheese, salt, pepper and some five grain hot cereal (in place of bread crumbs). I shaped the cakes, let them sit in the fridge for an hour, then started to brown them in a pan.

I am making note to not eat these at dinner or eat more than one at a time, and I will definitely always eat them with some protein. But, dang did they satisfy my craving. Success!!
