Boxing Match

Thanksgiving just passed, and more of the holiday season is descending on us all. Getting caught up in the festivities, paired with the likelihood of running short on time during the day, could be very detrimental to a healthy diet. In an effort to combat those large portion sizes common with the holidays, I like to think of each meal as a boxing match... me versus mile-high-piled-plate-of-goodies:

Tonight's special event features two great fighters. In the red corner, the former heavyweight champion, the Master of Disaster, the one and only... Oversized Meal! In the blue corner, coming from the great fighting city of Phoenix, the Dancing Destroyer... Body Smart Gal!

We are about to begin. The two fighters come to the center of the ring. They get their hands up. Ladies and Gentlemen, it's show time!

Here we go. Oversized Meal and Body Smart Gal begin circling the ring. Oh! A left jab from Oversized Meal starts off the match. Body Smart Gal responds by throwing a strong right punch at Oversized Meal. Meal staggers back. Body Smart Gal delivers another blow right to the jaw! And another one to the left of the head! It's absolute pandemonium! Oversized Meal steps back... seems to be throwing in the towel... Can it be? Is Oversized Meal done for? It's true! Oversized Meal sinks to the mat. Body Smart Gal wins!! Paramedics enter the ring. What is left of Oversized Meal gets carried out of the ring in a to-go box.

Ode To New Veggies

I have been trying new veggies recently (please, hold the applause). The acorn squash is one, add yellow squash and jicima and you have the start of a nice list of newbies. As a result, I wanted to put together a tribute about this recent dive into the unknown to the tune of a popular and sentimental song that details how big of a deal this truly is.

O! Say can you see by the noon's early light
What so proudly I hailed at my lunch's last gleaming,
Whose bold zest and bright hue through the nutrition fight,
O'er the table I ate, were so gallantly pleasing?
And the empty plate's red glare, my love surging in air,
Gave proof through my lunch, that new veggies add flair;
O! Say does that taste-spangled veggie yet save,
O'er the land of delight and the home of the brave.

Oh, do I miss potato chips. That salty, perfectly crunchy goodness has been haunting me lately. So, Joan suggested an alternative: Baked Corn Tortilla Chips. And, boy, are they good! A saving grace in my book.



Body Smart Chicken Fingers

Feelin' like a kid again with this tasty delight! And, later, I plan to make chicken parmesan with them. Oh boy!
