Hearty Dinner

Yummmm. Filling up my stomach with a dinner of salmon and avocado. Add my iced green tea drink and this dinner is satisfying beyond belief.

Light Potato Cakes

I had a craving for potatoes and ended up modifying a recipe for potato cakes to be a tad more Joan friendly. I boiled some red skinned potatoes in water with some garlic cloves and mashed them all. Then, I added parsley, Parmesan cheese, salt, pepper and some five grain hot cereal (in place of bread crumbs). I shaped the cakes, let them sit in the fridge for an hour, then started to brown them in a pan.

I am making note to not eat these at dinner or eat more than one at a time, and I will definitely always eat them with some protein. But, dang did they satisfy my craving. Success!!

Modification

Many Body Smart recipes are very versatile. For instance, I took the Light Macaroni & Cheese recipe and turned it into Cheesy Brown Rice! So tasty (well, there's cheese, so I guess no wrong could be done). I added some cauliflower to the mix and it makes an awesome side dish for grilled chicken breast. Yum.

Body Smart Spicy Shredded Chicken

A little spice to satisfy a Mexican food craving. And this recipe does not disappoint.
